Love is in the Air! ... Love for Cheesecake!

Love is in the air this week as we approach Valentine’s Day! What better way to show the special people in our lives some love than with a delicious Strawberry-Swirl Cheesecake! 

Cheesecake is no doubt a dessert option that is a classic but always a great option for any type of event from social gatherings to weddings. That is why we are giving you the inside scoop on how we create our own Strawberry Swirl Cheesecake!
First, here is what you will need:

Ingredients 
1-1/4 cup Graham Cracker Crumbs 
½ cup Sugar 
1/3 cup Butter (Melted)
20 oz Frozen Strawberries- Thawed 
1 tablespoon Cornstarch 
24 oz Cream Cheese – Softened
14 oz Sweetened Condensed Milk 
¼ cup Lemon Juice 
3 Eggs
1 tablespoon Water 
Now it is time for you to starting the baking:

Instructions 
1. Preheat oven to 325°.
 
2. In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press into the bottom of an ungreased 6-inch spring form pan.

3. In a blender, add strawberries, water, and cornstarch. Blend until smooth. Pour mixture into a saucepan and bring to a boil. Cook for about 2 minutes. Then, cool the strawberry sauce and reserve.
  
4. In a bowl, beat the cream cheese until light and fluffy. Gradually beat in the condensed milk. Add the lemon juice and continue to stir. When the cream cheese mixture is completely smooth, pour half of the mixture over the crust and place 1/2 of the strawberry mixture using a tablespoon in dots over the cream cheese layer. Use a knife to swirl the strawberry sauce into the cream cheese batter. Then repeat while pouring the rest of the cheesecake batter and the rest of the strawberry mixture. With a knife, cut through the top layer only to create your desired swirl look.  

5. Bake at 325° for 55-65 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.

6. Remove side of pan. Thin the chilled strawberry sauce with water if desired; serve with cheesecake. Store in the refrigerator.

1. Guest Count & Venue The first area we must address is the guest count and your venue requirements. Depending on your venue, you will have to adjust your guest count while of course following the state guidelines. From there- we can get planning! Moving from a venue to your private residence? No problem! If you are using True Cuisine & Sweet Baby Ray’s as your catering vendor, we adjust to your venue with no problem. Here are some general areas to consider when adjusting to a new venue: Guest seating / overall new floor plan Food service style Menu & Bar Custom décor These areas will be explained next! 2. Floor plan Planning your floor plan can be tricky for micro weddings as we are still enforcing social distancing as much as possible- even at private residences! Limiting tables to 6 guests each is one way to enforce social distancing during dinner service. Allowing for as much space as possible between each guest table is also important for social distancing. If you are working with different rooms or a backyard- we make it work!
